Christmas Casserole

7-8 slices of cubed bread
2 cups of shredded cheese
20 links (or 4 packs) sausages; brown and cut into thirds
1 1/2 cup of milk
4 eggs
3/4 tsp of dry mustard
1 cup of cream of mushroom soup
1/2 cup of milk

Put bread in the bottom of a greased 9x13 baking dish. Add shredded cheese. Put sausages on top. Mix and pour 1 1/2 cups of milk, eggs and dry mustard over this and let it sit overnight. Before baking, pour soup and milk over the top. Bake at 300 for 1 1/2 hours. Enjoy!

Homemade Hot Cocoa Mix

I had someone request this recipe, so I figured I'd post it here :)



10 2/3 cups (or 25.6 oz.) powdered milk
6 oz. coffee creamer (this will be the main source of flavor so pick one you like!)
16 oz. nesquik
2 cups powdered sugar


Since there is so much powdered milk in it, you have to mix about half cocoa and half water together to get a good chocolatey flavor. Enjoy!

Chocolate Chip Cookie Dough Cheesecake


Yum. This was seriously the best cheesecake I have ever had..and I drool just looking at this picture!

Crust:

1 3/4 cups crushed chocolate chip cookies or chocolate wafer crumbs (I think Spencer used crushed graham crackers with crushed chocolate chips)
1/4 cup sugar
1/3 cup melted butter or margarine

Filling:

3 packages (8 oz. each) cream cheese, softened
1 cup sugar
3 eggs
1 cup (8 oz.) sour cream
1/2 teaspoon vanilla extract

Cookie Dough:

1/4 cup softened butter or margarine (not melted)
1/4 cup sugar
1/4 cup packed brown sugar
1 tblsp. water
1 tsp. vanilla extract
1/2 cup all-purpose flour
1 1/2 cups mini semisweet chocolate chips, divided

In a small bowl, combine cookie crumbs and sugar; stir in butter. Press onto the bottom and 1" up the sides of a greased 9" springform pan; set aside. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low just until combined. Add sour cream and vanilla; beat just until blended. Pour over crust; set aside. In another mixing bowl, cream butter and sugars on medium speed for 3 minutes. Add water and vanilla. Gradually add flour. Stir in 1 cup chocolate chips. Drop dough by teaspoonfuls over filling, gently pushing dough below surface (dough should be completely covered by filling).

Bake at 350 degrees for 45-55 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight; remove sides of pan. Sprinkle with remaining chips.

Tuna Noodle Casserole


This was always one of my favorite things to eat growing up and I finally found a good recipe for it (although I just realized that Natalie and Rachel probably won't like it because of the peas and the tuna lol!! sorry guys!). I also love it because it is super easy to make :)

2 small cans of tuna fish, drained
1 16 oz. package of wide egg noodles
1 can each of cream of chicken and mushroom soup
8 slices of American cheese
1/2 - 1 tsp. garlic powder (it calls for 1 1/2, but that was too garlic-y for us)
1 cup mayonnaise
1 cup of milk
2 cups frozen peas
salt and pepper to taste

Boil the egg noodles and set aside. In a medium saucepan, mix together soup, mayonnaise, milk, and garlic powder until warm. Add the cheese one slice at a time until melted. Add the tuna fish and stir until boiling. Remove from heat and mix with noodles. Top with cooked peas.

(We've also figured out it's a lot easier to mix everything together in a big plastic tupperware so that you can just put it in the fridge when you're done.)

Peach Cobbler














Peach mixture:


8-10 peaches (peeledpitted and sliced)
3/4 cup sugar
1 tsp cinnamon
1 Tbl flour
1/2 cup water (add less water if peach are very juicy)

Mix above ingredients with peaches and pour in to 9 x 13 inch pan.

Topping:

1 cup flour
3/4 cup sugar
1 tea salt
1 tea baking powder
1 egg beaten

Cut in egg until mixture is crumbly and sprinkle over top of peaches. Pour 1/3 cup melted butter on top of topping. Bake at 350 degrees for 35 to 40 minutes or until golden brown.

Chocolate Zucchini Bread
3 Eggs
1 cup sugar
1 cup brown sugar
1 cup vegetable oil
4 tablespoons cocoa
1 teaspoon vanilla
2 cup grated zucchini
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
Combine all ingredients in large bowl & mix until blended. Grease & flour 2 large loaf pans, divide mixture into both pans. Cook @ 350 degrees for 50-60 minute or until toothpick comes out clean. Let cool for 15-20 minutes on cooling rake, then remove from pans. Frost with cream cheese frosting.
Cream Cheese Frosting
1 80z package cream cheese (softened)
5-6 cups powdered sugar
4 tablespoons milk
1 tablespoon vanilla
Mix all together until fluffy.

Great Recipes

So lately with my calling, I'm the enrichment leader, I have come across a ton of great recipes. So I thought that it might be fun to have a blog that the members of the Marecle family could go & post recipes that they like. And also have it be a place where one could go to find a recipe that they have misplaced (i.e. cinnamon rolls, strawberry shortcake...). You know that we all do it....go to find that recipe card & can't locate it & call mom to get it & she's not home & didn't take her cell phone so you could call her & find out what time she'll be home to give the recipe to you....! Anyways....the email address on this is nmarecle@hotmail.com & the password is mygirls2. After typing the password I am going to change it to something that is easier for all to remember (as soon as I can figure out how to do that, when I do I'll post the new one.

So let the fun begin. My hope is that it will one day have so many that we would be able to get it printed & all have in a book form. Love to all. Natalie
